Building for cleaning, not just for looks
A restaurant fixture is cleaned aggressively, several times a day, for its whole life. That single fact drives more of the detailing than the design concept does. Junctions that trap crumbs or liquid become the thing that fails inspection and the thing staff quietly come to hate. Where millwork meets the floor, meets the wall, or meets a food-contact surface, the junction needs to be sealed and shaped so a cloth actually reaches into it.
Substrate choice matters more here than in almost any other setting. Standard particleboard behind a bar or under a service station will swell the first time a spill sits in a joint overnight, and swelling is not repairable — the unit is replaced. Moisture-resistant substrate through wet zones costs a modest amount more at build and removes the most common cause of early replacement.
Alberta Health Services inspects food premises against requirements that affect joinery directly: surfaces in food-handling areas must be smooth, non-absorbent and cleanable, and junctions generally need to be sealed or coved. It is worth having the fixture drawings reflect that from the start. Retro-fitting a coved junction into a finished bar is disruptive and rarely looks intentional.

- The centrepiece and the hardest-working fixture in the room. Bottle display, glass storage, speed rails, under-counter refrigeration and drainage all have to coexist behind a face that customers look at all evening.
- Banquette and booth seating
- Fixed seating uses floor area far more efficiently than loose chairs. Built to take daily cleaning underneath, often with storage in the base.
- Host stands and service stations
- Small fixtures that absorb constant use — POS, printers, menus, cutlery, linen, water service.
- Wall panelling and feature walls
- Sets the room's character, and in a hard-surfaced dining room does useful acoustic work.
- Coffee and counter service builds
- Equipment-led joinery where machine dimensions, water, drainage and power dictate the carcass.
- Back-of-house casework
- Dry storage, staff lockers and prep-adjacent units built to the same cleanability standard as the front.
Mistakes that cost restaurants money
- Standard substrate in wet zones
- The single most common early failure. One overnight spill into an unsealed joint and the panel swells permanently.
- Bar height and depth set by drawing rather than by staff
- A bar that is 50mm too deep slows every drink made across it. Working heights should be checked with the people who will stand there for eight hours.
- Forgetting equipment ventilation and access
- Under-counter fridges need airflow and need to come out for service. Building them into a sealed void shortens their life and turns a routine repair into a carpentry job.
- Banquettes with no access underneath
- If the base is sealed to the floor with no way to clean beneath it, it becomes a pest and odour problem that no cleaning schedule fixes.
- Unrepairable finishes at contact points
- Table edges, bar rails and booth ends take daily impact. A finish that cannot be sanded and recoated in place means replacing the whole element.

- What materials are used for bar tops and counters?
- Stone and solid surface for durability and cleanability in wet and food-contact zones. Solid timber is used where the material is part of the design intent, with a fully sealed commercial finish and the understanding that it needs maintenance. The applicable health requirements for the specific zone govern the choice.
- Can you build around existing bar equipment?
- Yes, and the equipment schedule needs to be confirmed before shop drawings are finalised. Refrigeration, ice wells, speed rails and glass washers all have specific dimensional and ventilation requirements, and building millwork before the equipment is selected is the most common cause of rework.
- How fast can you deliver a restaurant fit-out?
- Restaurant projects almost always work to a fixed opening date, and millwork sits late in the sequence. We give a realistic lead time at quotation based on scope and material availability, and identify long-lead items early so they can be ordered ahead of the main package.
- Do you build banquette seating?
- We build the structural millwork — the frames, bases, backs, dividing screens and any integrated storage — and coordinate with an upholsterer for the finished seating. That split is standard in hospitality projects and we manage the interface.
- Can you work around an operating restaurant?
- Yes. Renovation work in an operating venue is typically scheduled overnight or during closure periods, with dust containment and clean-down before service. It needs to be planned from the outset because it affects both the sequence and the cost.
- Do you build to Alberta Health Services requirements?
- Yes. In practice that means smooth, non-absorbent, cleanable surfaces in food-handling areas, sealed or coved junctions where fixtures meet floors and walls, and no detail that traps debris where it cannot be reached. We detail for it in the drawings rather than adding it afterwards, because coving and sealing a finished fixture on site is disruptive and rarely looks like it was intended. Your health inspector is the authority on the specifics for your premises, and we build to what they require.
- Can millwork be installed while we stay open?
- Sometimes, depending on what is being built. Replacing banquettes or panelling in a defined section can usually be staged around trading, working overnight or on closed days. A bar rebuild generally cannot — it takes the service point out of use, and the dust and noise are incompatible with service. Where a phased approach is possible we agree the zones and the sequence before starting.
- What is the most durable surface for a bar top?
- It depends on which failure you care about most. Solid surface is seamless, repairable by sanding and forgiving of the constant wet contact a bar sees, which makes it the most practical choice for most rooms. Stone is harder and more striking but chips at edges and cannot be repaired in place. Timber has the most character and needs the most maintenance — it wants recoating on a schedule rather than when it starts to look tired. For the front edge, where glasses and forearms land all night, a solid hardwood lipping outlasts any applied edge.
