The short answer

Doors are one of the most underrated upgrades because they are noticed as a set rather than individually. Hollow-core flat doors are strongly associated with the era they were installed, and replacing them on one floor changes every room slightly. The caveat is that doing three of eight looks worse than doing none.

What you actually get

A dated element removed from every room: Flat hollow-core doors are era-defining in the same way oak railings are. They are in every room and nobody looks at them individually.
Genuine sound isolation, with solid core: The difference between a hollow-core and solid-core door closing is immediately obvious. Worth it for bedrooms, bathrooms and a home office.
Better hardware: Handle sets are touched several times a day, and cheap ones feel cheap every time.
A chance to fix sticking doors: Many older doors bind or fail to latch. Replacement resolves it, though so does adjustment if the door itself is sound.
